Chia Seed Delight Recipe

Chia seeds are loaded with antioxidants, vitamins, minerals, and fiber. They feature a perfect balance of essential fatty acids: 30% of chia seed oil is Omega 3 oil and 40% is Omega 6 oil. Studies also show that eating chia seed slows down our bodies’ conversion of carbohydrate calories into simple sugars. This is great for preventing spikes in blood sugar, whether you are diabetic or not.

Chia seeds are also highly hydrophilic, capable of absorbing 10-15 times their weight in water, and of great help in keeping bodies hydrated. Chia seeds gel when wet and, when in our digestive systems, this gel prevents absorption of some of the food (and calories) that we eat. This makes the chia seed a great helper for those of us looking to lose weight!

Hi kimberly! I have thyroid problems and I’m worried about the soy content in dr. O’s probiotics you have us on, is that small soy connect going to further hurt my thyroid? Will it do more good than harm? Any help is greatly appreciated, you are amazing! Thanks for changing my life with you book!

Do you recommend grinding or even soaking chia seeds? I have been eating whole chia seeds but am beginning to wonder if they, like flax seeds, need to be ground to fully reap all the benefits they have to offer. Thanks!

Okay, mine does not look like that. I tried to take it to work for lunch today, and when I went to get it, I had a gelatinous mass that was kinda sticky. Can’t figure out what I did wrong :/…is it better to not let it sit for several hours?

I have this for breakfast all the time (so yummy!) I make it the night before, so I know it’s fine to leave for several hours. You probably just need to add a bit more liquid if you find it’s still too thick after you’ve stirred it up.

    Hi Kimberly!

I am trying to incorporate chia seeds into my diet. As far as food pairing goes, where would I fit a daily serving of chia? Can I only eat them at night, as dessert, if I’ve eaten a protein/nut dinner but not after a starch dinner? Can they be eaten for a snack in the afternoon? Thanks for your help! I love your book and all of the great information!

I was wondering about the food pairing also… Obviously glowing green smoothie first thing in the morning, but where would this fit in? Is it a ferrari, a semi-truck, or something in-between?? 🙂

Your local health food store should have chia seeds. Like Sprouts or whole foods They are around $9.00 a lb.

Tried this twice now and all I get are huge gelatinous globs of seeds sitting in the milk, not a thick, creamy mix. Soaking too long? Not long enough?

You need to keep stirring it every few minutes unti it looks like pudding. I know it says to let soak for 15 minutes, but that leads to lumpy chia seeds. I hope this works for you.

If we are eating a healthy diet like you suggest, why would we want these chia seeds stoping absorption? I guess in my case I’m not try to loose weight, just be healthy and actually gain muscle, should i stop using this?

Hi Kimberly, I have a friend (who is a woman!) Who is using your program and she swears by it. That , combined with her results, ( she feels and looks fantastic!) has prompted me to look into your method. As a man am I safe with this or will I need to modify the program and if so, in what way(s)? I do have type 2 diabetes which has been controlled by diet the last few years. Super excited to get started.

      Hey Jessica,
I don’t think that solid nibs would work for this one, but you can put them in a dry blender for a few minutes or until they grind into a powder (you may need to take small breaks for the blender not to overheat depending on what kind of blender you have). This is what I did and it worked great! 🙂 I love this recipe- It’s like pudding, but healthy and deeee licious!

I love the taste, but not crazy about the texture…is it ok to give it another whirl through the blender after the chia seeds have absorbed the liquid to make it smoother?
