Sally’s (my mother!) Easy Bell Pepper Salsa Recipe

Yields:  large bowl, to serve about 6

My mother Sally is a great cook, and has a way of making even simple dishes look and taste great.

I never used to put bell peppers in salsa, until mom started doing it. The different colored peppers add different flavors and levels of sweetness.  This is SO great to keep around the house in big batches, especially with summer. I use it as a salad dressing, a dip or just to eat plain when I’m wanting to chew something. Try it for yourself!

Ingredients:

  • 4 large tomatoes

  • 1 large sweet onion, or about 2 cups chopped onion

  • 1 large orange bell pepper

  • 1 large yellow bell pepper

  • 2 cups chopped cilantro

  • ½ tsp. ground black pepper

  • 2 Tbs. lemon juice

  • ½ Tbs. Celtic or Himalayan sea salt

  • Cayenne pepper, to taste

Instructions:

This is a meditative recipe- meaning, a lot of chopping. Dice the tomatoes, onion and bell peppers and add to a large mixing bowl. Chop the cilantro and add as well. Add the black pepper, lemon, sea salt and cayenne pepper, and adjust to taste. Serves about 6.

    I love that you describe your mom’s recipe as “meditative”. How apt. . .I find chopping incredibly therapeutic especially when I make south east asian dishes, there is a WHOLE LOT OF THERAPY – absolutely FREE and an effective way to beat mental stress! Thank You Both…….

    Why is there no print option?

      Copy and paste the recipe into a Word Document and then print. It prints beautifully that way.

    Kimberly, I need to make this very very soon.

    I am a huge fan of salsa and all of its yumminess. It is a great way to add vegetables in to your diet and flavor to your food.

    The great thing about making your own salsa is that you are the judge of how spicy it is, or if you want a sweeter flavoring to it, and how fresh it is.

    I love the thought of adding peppers to it. The color especially appeals to me, but I am sure it adds some sweetness and depth of flavor as well.

    This on top of some chicken is going to be my dinner one night this week!

    When I gave this salsa a shot I was wary, given there was no oil involved. I was, however, pleasantly surprised at the taste. It was filling, tasty and didn’t bog me down. It will keep for a day or two, but no longer; so I have to adjust the proportions of the ingredients accordingly which is easy enough to figure out. Overall, I have been mezmerized by the taste of the recipies from the two books. I have become addicted to the curried quinoa. I have lost weight and do not feel hungry, probably because I am slowing down and enjoying the taste as opposed to going for the full feeling.

        Kimberly, I really loved the Salsa. I made a big batch and put it in mason jars in the refrigerator and added some to my salad everyday. Wonderful!! I have a question — I made a batch of the Probiotic & Enzyme Salad, after one week, I opened the jar and the water began to slightly spew out just a bit. Is this normal? I put it in the refrigerator and am afraid to eat it until I know if this was to be expected when opening the jars. It was a bit like shaking a soft drink can just a little and then opening it.

    I made this and kept it in the refrigerator. It lasted about a month without growing hairy stuff. It looked and tasted great, but I was wondering if nutritionally it was any good to keep it that long?
