In case you hadn’t noticed, I LOVE to travel. It fuels my heart fire to explore new places, experiencing new cultures, foods, people — it’s nourishment for my soul.
It’s also tremendous fuel for my creative side, and I feel like we’ve launched the Beauty Detox Blogging Network (and these new recipe assignments!) at the perfect time, as I feel so creatively empowered to come up with new ideas and share with you while on this journey.
Today I wanted to come up with a recipe to share that’s great for summer picnics, and in particular, the upcoming Fourth of July weekend for my Beauty Detoxers in the States! It’s hard to believe that one year ago, this weekend was not only a holiday but my bachelorette weekend with my bridesmaids. And now I’m married and things just seem out of man-made time…like we’ve been together forever. Do you ever get that feeling about time warps?
Anyways, as you may know, I’m super into sweet potatoes. They are low in fat, high in nutrients, easy to digest and are extremely beautifying and skin-brightening. I like them in summer as well, and served room temp in this packable salad, The Sweet Potato Beauty Detox Salad makes for an awesome, yummy and you guessed it…beauty detoxifying dish on the go!
Before We Go Into the Recipe…
I want to do what is now becoming customary each Wednesday and thank everyone who participated in our Beauty Detox Blogger Recipe Assignment last week, which was my Mellow Yellow Squash Dip. Now for this week’s assignment…
Instead of dairy-based sour cream, egg and other ingredients that are common (and clogging!) in other potato salads, we can achieve that sort of texture from the combination of the Dijon mustard, avocado and nutritional yeast. I ran out of celery this morning as I used the last stalks in my GGS, but cucumber works really well also. The little bit of olive oil (which we always use judiciously!), helps balance the acidity of the mustard.
Sweet Potato Beauty Detox Salad
Serves 3-4
2 large or 3 smaller sweet potatoes
1/4 cup Dijon mustard
2/3 cup ripe avocado
1 minced garlic clove
1/3 cup diced celery (or cucumber, if you’ve run out of celery, like me today!)
2 Tbs. minced purple onion
2 Tbs. nutritional yeast
2 tsp. olive oil
High quality sea salt, to taste
Freshly ground black pepper, to taste
Instructions
Peel and cut potatoes into 1-inch cubes and place in a single layer in a steamer try. Steam for about 15-18 minutes, or until tender. Set to the side to cool.
In the meantime, add the Dijon mustard into a large mixing bowl, and mash the avocado into it. Stir in the minced garlic, celery, purple onion and nutritional yeast and olive oil in a bowl.
Toss the sweet potatoes into the mixing bowl with the sauce, and mix to coat well. Season with the salt and pepper to your liking.
Enjoy with a large green salad!
