Feel Gratitude Sweet Potato Soup

 

 

Today’s Feel Gratitude Sweet Potato Soup is packed with so much goodness that you are going to want to make it all fall and winter long. It’s loaded with my seasonal favorites: sweet potatoes, carrots, and celery!

Turn this soup into a gratitude practice by focusing on preparing the meal with your full heart and attention. And then eat it slowly and savor every bite. Give yourself time to actually feel the amazing intelligence of the plant foods (a form of plant medicine, really!) nourishing your body. Allow yourself to appreciate this sweet and salty flavorful soup, full of beautifying nutrients. And don’t worry if you go back for seconds! I certainly do 🙂  

Why Fill Up on Sweet Potatoes?

Don’t you just love sitting down with a hearty bowl of satisfying soup?! I do! Especially my Feel Gratitude Sweet Potato Soup, that is full of the balancing flavors of salty and sweet plant-based goodness.

Filling up a large portion size of my Sweet Potato Soup is like serving yourself up a super dense bowl of easily digestible superfoods! It makes you feel satisfied, grounded, beautiful, radiant and powerful.  

And even better,  you can feel grateful for eating this soup because you don’t have to work hard to digest it. By slowly cooking the sweet potatoes, carrots, and celery in this soup, you’ll be helping your body easily break down their fiber and quickly absorb all their goodness. I believe eating both raw and cooked veggies are a beneficial part of a beautiful diet.

All of the veggies you’ll find in my Sweet Potato soup are a good source of dietary fiber, making this soup wonderfully filling. Fiber also helps to maintain stable blood sugar levels so you won’t notice an energy spike or crash.

BONUS: sweet potatoes and carrots are grounding “earth” foods, grown in the earth itself. These are important foods to incorporate in fall, the season of what is called vata in Ayurveda, when the wind energy gets kicked into high gear. This is one of the most important times of the year to bring in these earthy veggies to help keep us balanced with the elements of nature!

Beauty Perks

During this time of year, I just love to cook with sweet potatoes. One of my favorite reasons for using sweet potatoes is that they have so many vitamins and minerals, including vitamins B6, C and A. Just one medium sweet potato scores about 438% of your daily vitamin A requirement. Vitamin A is wonderful for beautiful skin. It helps promote healthy cell turnover and communication. So get you so more sweet potato, please!

Sweet potatoes are high in antioxidants and low in sodium, saturated fat, and cholesterol. They are also a good source of potassium and manganese, minerals that are powerful for boosting brain health. Don’t we all need a little brain boost? My brain feels more intact again since Bubs is over 2 now, but for a while I felt a long-term, sleep deprived Mama brain fog :).

Another veggie I gravitate towards during the fall season is carrots. Carrots are grown from the earth, and have a grounding, stabilizing energy. The more I go on in my wellness journey, the more in awe of the intelligence of plant foods I am, which cannot be quantified just into calories and other numbers. I recently planted a whole tray of Purple Cosmic Carrots in my garden- that was the name of the variety of carrots! No joke!

Carrots also possess strong cleansing properties that are super effective at cleansing our livers. And if you haven’t heard me share this enough, let me explain why a clean liver = a beautiful body. When our livers are functioning well, toxins can actually be removed from the blood.  And when toxins are removed, our blood can more easily transport nutrients to our whole body. This includes healthy nutrients to our skin, hair, and nails.

Carrots also contain calcium, potassium, iron, fiber, vitamins B1, B2, B6, C, K, and biotin—amazing skin refresher and beautifying properties. Say hello to dewy vibrant skin after a bowl of this soup.

Beauty Clue!  Do you know that sweet potatoes and carrots that have a deep orange color are likely to boost your skin with a radiance boost? That is because their color indicates carotene content and carotene helps to magically brighten your skin. We are attracted to beautiful colors, which also clue us into their powers.

I just absolutely love making this satisfying and beautifying Sweet Potato Soup. It’s sweet and salty flavor makes all the yummy nutrients truly explode in your mouth. Feel Gratitude Sweet Potato Soup

Ingredients
  

  • ½ cup water
  • 3 Tbs. tamari
  • 4 shallots sliced
  • 4 sweet potatoes or yams peeled and diced (about 4 cups)
  • 3 large carrots thinly sliced
  • 1 head of celery thinly sliced
  • 1 red bell pepper seeded and diced
  • 2 cups crushed tomatoes
  • 6 cups vegetable broth or water
  • 1 cup cooked garbanzo beans
  • ½ cup chopped fresh cilantro
  • 3 tsp. curry powder

Instructions
 

  • Prepare all your ingredients by chopping your shallots, sweet potatoes, carrots, celery, and bell pepper.
  • Heat water and tamari in a large pot. Add shallots and sweet potatoes or yams and cook over high heat, stirring often, until shallots are soft for about 5 minutes.
  • Add chopped carrots, celery, and bell pepper. Cover and cook 3 minutes, stirring occasionally.
  • Add tomatoes, broth or water, beans, and curry powder. Stir to mix, then cover and simmer until vegetables are tender for about 15 minutes.
  • Garnish with cilantro and enjoy!

    Not sure if my comment went through..it vanished!! The soup looks wonderful. Looks like it makes a lot. With only 2 people in my family, I wonder if it reheats well. I adore leftovers but am concerned this would get mushy. Should I halve the recipe?

I know any kind of starch can get funky after being frozen so if you think you won’t be finishing the amount, I would definitely trying halving it. Trial and error, right?!     Are the crushed tomatoes just tomatoes you processed in the food processor or are they already bought like than from a can?

      Hi Danielle and thanks for your question. You can do either really. I personally try to use fresh and crush them myself to give my body a break from any health concerns regarding canned goods and BPA. Do the best you can and if you have to buy canned from time to time, give yourself the okay to do so without the guilt and buy fresh when you can. Lots of love! 😉

And also my sweet potatoes start melting and over cooked before the other ingredients, do you think I should add the sweet potato last ? I tried the crushed tomatoes I didn’t like it so am gonna do the paste next time , thank you Kimberly

    Oh how I love, love, love this soup! The combination of sweet and spicy from the curry is so comforting and keeps us going back for more. We have this recipe on repeat and is good all year but especially comforting in the winter.
