Feel Earthy Roasted Beets and Brussels Sprouts Salad

Beets and Brussels sprouts tend to be lower on people’s favorite veggie list… but they can actually really be delicious if you know how to prepare them! And well, Beauties here is your chance to give them a second chance.

My Roasted Beets and Brussels Sprouts Salad is so simple to make and yet so filled with delicious flavor! I created this recipe as a warming detoxing meal for you to have on hand during the cold winter season.

Reconnect with Beets and Brussels Sprouts

You’ve likely heard the famous phrase, “we are what we eat”. I say we are what we eat and digest, actually, but you get what the gist is. It may seem common sense, yet have you taken a deep dive and really thought about how certain foods affect you?

We absorb the energy of the foods that we eat. That’s why I just love eating beets and Brussels sprouts! Since beets are grown underground, eating them will actually help keep you grounded and feel more connected to the earth. Such foods are helpful when we are going through transitions and stressful times in our lives. And this is true for all rooted vegetables. 

Add the Beets!

Another major plus for beets is they are naturally sweet, giving your body a steady supply of energy. These beautiful vibrant veggies help keep our minds focused during a mid-day slump. Unlike those other sweets you might find on the dessert table, beets help to stabilize our blood sugar since they are digested more slowly and won’t cause a sugar-induced spike.

Beets stimulate our liver and help to oxygenate our blood by up to 400%! Think of them as your natural colon cleanser, ready to help you detox after that holiday party or after a boozy night out with friends. :) 

More Brussels Sprouts Please!

To function at it’s best, your body’s detox system also requires a large supply of sulfur. And by eating your Brussels sprouts you will be getting an outstanding source of sulfur!

Brussels sprouts are worth moving over to your favorite veggie list. These guys are a powerful punch of nutrition. Containing glucosinolates, they can help jumpstart your liver’s natural detoxification processes. And being an amazing source of vitamin, C and K, Brussels sprouts are a top anti-inflammatory veggie loaded with antioxidants.

One other surprising reason to not skip out on the Brussels sprouts is that they are a great source of omega-3 fatty acids. Eating just a cup and a half will give you about 1/3 of your daily recommendations for ALA.

So if you are feeling a bit disconnected during this time of year, or you overdo it and eat a few more treats than you typically do, reach for my Roasted Beets and Brussels Sprouts Salad. The rooted veggies in this salad will help you feel grounded and reconnected to the earth. And being that beets and Brussels sprouts are a natural colon cleanser, you will feel detoxed in no time!

Feel Earthy Roasted Beets and Brussels Sprouts Salad

Serves: 4
Ingredients
  • 2 beets, peeled and cubed
  • 4 cups of Brussels sprouts, trimmed and halved
  • 4 carrots, chopped into ½ rounds
  • 1 large butternut squash, cubed
  • ¼ cup coconut oil
  • ½ cup balsamic vinegar
  • 2 Tbs. Dijon mustard
  • Sea salt, to taste
Instructions
  1. Prepare all your ingredients. Preheat the oven to 400°F.
  2. Add the Brussels sprouts, beets, carrots and butternut squash into a cast iron dish. Lightly coat ingredients with coconut oil, and sea salt.
  3. In a small saucepan, bring balsamic vinegar to boil on medium-high heat. Add Dijon mustard and cook for about 5 minutes, reducing vinegar by about half.
  4. Once veggies are finished roasting, dish into your favorite bowl. Dress with the vinegar and mustard sauce and add sea salt to taste.
