This recipe is a super yummy treat to spread on top of some banana or even on top of unsweetened coconut yogurt! You can also enjoy it on your favorite gluten-free toast (though this is not properly food combined, so I suggest taking your digestive enzymes first!).
We all have sweet cravings from time to time. I created my Ginger Apple Coconut Jam to help you satiate those sweet cravings when you have them.
The powerhouse ingredient in this recipe is the fresh ginger.

Feel Treated Ginger Apple Coconut Jam
Ingredients
- 2 inches of fresh ginger peeled and diced into thin slices
- 3 cups of apples cored, peeled and diced into 1 inch cubes
- 1 cup of water
- 1 cup coconut nectar
- 1 cup of coconut sugar
- 1 large lemon juiced and zested
- 1 tsp. cinnamon
Instructions
- Place the apples and ginger into a food processor and pulse until chunky.
- Add the processed apples and ginger into a medium sized saucepan and cook on low heat for 5 minutes.
- Pour in water and turn the temperature to high until the mixture is just under a boil, then immediately lower heat to a simmer and cook for 45 minutes.
- Slowly stir in your sugar, coconut nectar, lemon juice and zest and simmer for an additional 20 minutes, stirring often, until you reach your desired jam like consistency.
- Sprinkle in cinnamon, and remove from heat. Mix jam thoroughly and place into your favorite glass jar. Let it cool to room temperature before placing into your fridge and enjoy!

when does the lemon juice and zest get added? When it states to add the sugar – does it mean both the nectar and sugar? I can’t wait to try this – sounds delic!!!
