Feel Treated Ginger Apple Coconut Jam

Do you have days when you just feel like you want to treat yourself to something a little sweet but still good for you? Well Beauties, treat yourself to my Ginger Apple Coconut Jam! This recipe is a super yummy treat to spread on top of some banana or even on top of unsweetened coconut yogurt! You can also enjoy it on your favorite gluten-free toast (though this is not properly food combined, so I suggest taking your digestive enzymes first!).

We all have sweet cravings from time to time. I created my Ginger Apple Coconut Jam to help you satiate those sweet cravings when you have them.

The powerhouse ingredient in this recipe is the fresh ginger. 

Do you know that ginger is a member of a plant family that includes cardamom and turmeric? It sure it!! Like these two spices, ginger is a huge powerhouse that provides tons of benefits! Cultures all around the world have been using ginger for thousands of years, for its various medicinal purposes. Colds, nausea, arthritis, migraines, and hypertension are just a few ailments ginger commonly treats. So if you’re feeling a little under the weather you can try my Ginger Apple Coconut Jam and hopefully, it will lift you right up!

Energetically, ginger in some ancient systems is linked to helping out our lungs and our large intestine. Ginger is a hot, warming, spicy food, which is why it is a perfect item to reach for when you are feeling under the weather. The pungent taste of ginger invigorates our intestines, promotes circulation, opens our pores, and expels pathogens from our system. It’s considered a broad-spectrum antibacterial, antiviral, antioxidant, and anti-parasitic properties. And ginger is also an anti-inflammatory. It’s an incredible Feel Good beauty food (!).

Ginger is so valuable for pain relief of joint pain, menstrual pain, headaches, and more. You can see why I just had to make ginger the star ingredient in my Ginger Apple Coconut Jam. This food belongs in your life and I just love showing you different ways you can incorporate it into your day!

Apple Ginger Coconut Jam

Feel Treated Ginger Apple Coconut Jam

Ingredients
  

  • 2 inches of fresh ginger peeled and diced into thin slices
  • 3 cups of apples cored, peeled and diced into 1 inch cubes
  • 1 cup of water
  • 1 cup coconut nectar
  • 1 cup of coconut sugar
  • 1 large lemon juiced and zested
  • 1 tsp. cinnamon

Instructions
 

  • Place the apples and ginger into a food processor and pulse until chunky.
  • Add the processed apples and ginger into a medium sized saucepan and cook on low heat for 5 minutes.
  • Pour in water and turn the temperature to high until the mixture is just under a boil, then immediately lower heat to a simmer and cook for 45 minutes.
  • Slowly stir in your sugar, coconut nectar, lemon juice and zest and simmer for an additional 20 minutes, stirring often, until you reach your desired jam like consistency.
  • Sprinkle in cinnamon, and remove from heat. Mix jam thoroughly and place into your favorite glass jar. Let it cool to room temperature before placing into your fridge and enjoy!

    when does the lemon juice and zest get added? When it states to add the sugar – does it mean both the nectar and sugar? I can’t wait to try this – sounds delic!!!

The following step has been updated: Slowly stir in your sugar, coconut nectar, lemon juice and zest and simmer for an additional 20 minutes, stirring often, until you reach your desired jam like consistency.
