Why Gluten-Free Pasta
There are so many congestive foods out there that I highly recommend to let go of. And Beauties, pasta made up of gluten is one of them. Gluten is a sticky protein that is difficult for many to digest. Which is why I opt for gluten-free noodles in this Rainbow Gluten-Free pasta recipe.
I like using brown rice gluten-free pasta because it tastes closest to real pasta and is quite filling. Brown rice pasta is among the list of my favorite beauty grains. But we live in a time where there are so many other gluten-free pasta options available. Some of the other choices could be amaranth, quinoa, millet, buckwheat, and wild rice.
Fiber Helps Us Feel Our Best
My Rainbow Gluten-Free Pasta recipe also has something else pretty amazing worth noting. Fiber! All the delicious and nutritious veggies that are in this dish bring some dietary fiber into the mix too. And we all can use a boost of fiber in our lives.
Fiber is often forgotten when people think about their overall health and nutrition. But fiber is such a crucial element in our diet that we need to consume in order to feel our best! Think of fiber as the hairs that are connected to a broom. When you eat fibrous foods that broom goes into your digestive tract and scrubs away all the waste that built up inside over time. Fiber is responsible for keeping you regular and cleansed!

Feel Satisfied Rainbow Gluten-Free Pasta
Ingredients
- 4 cups of broccoli florets
- 1 package of gluten-free pasta
- 1 jar of organic dairy-free pasta sauce
- 2 cups of coconut milk
- 1 red bell pepper chopped
- 3 cups of mushrooms
- 2 cups of cherry tomatoes cut in half
- 3 Tbs. curry powder
- 1/2 tsp. cayenne pepper
- 2 Tbs. turmeric
- Nutritional yeast optional
- Red pepper flakes optional
- Sea salt to tast
Instructions
- Bring a large pot of water to a boil.
- Add broccoli and let the water return to a boil.
- Once water is boiling add in pasta. Cook 12-15 minutes (as directed by package).
- In a separate pan, saute bell peppers until tender.
- Add in mushroom and simmer until tender (3-5 minutes).
- Next add coconut milk, spices, and stir together.
- Add in red sauce and tomatoes and remove from heat.
- Lastly, add in your cooked pasta and broccoli and toss together.
- Sprinkle on some nutritional yeast and red pepper flakes, season with sea salt and pepper to taste and enjoy!
