Why I Love Quinoa Bowls
Like the Incas, I like to refer to quinoa as the “mother of all grains”. I like anything with a “mother” reference. Like the “mother” that would ideally be included in raw, fermented apple cider vinegar. Anyways, I digress…
Quinoa is a staple in my life! Bubby can eat a whole huge bowl of it for lunch. What about its place in your life, my love?! Not only is quinoa so versatile in what you can do with it, but also it supplies one of the most nutritious forms of complex carbs in the world. While some grains just provide your body with simple carbs, quinoa will give you so much more!
Quinoa bowls are such a wonderful way to fill yourself with powerful, easy to digest nutrients. For example, quinoa contains all of the essential amino acids. Which means it is a complete form of plant-based protein. Some protein-rich foods are dense and difficult to digest, but not quinoa. This ancient grain actually works with your digestion instead of against it. It is rich in fiber, which helps keep your digestive tract cleansed while sparing up so much extra energy for you to enjoy the festivities!
This particular quinoa bowl recipe is loaded with foods and spices that give it a bit of a Mexican flair. But the great thing with quinoa is that you can really mix it with any kind of herbs or spices and it will be delicious. I just love all the varieties of quinoa bowl recipes that you can make! Dressing Up Your Quinoa Bowls
You really can have fun with quinoa bowls and dress them up with any of your favorite ingredients. For this particular recipe, I paired it with some of my favorite plant-based foods, including avocado, cabbage, and orange bell pepper! But that doesn’t mean that you too have to use these exact items. You can certainly swap out the orange bell pepper for a red one if you prefer. Or even add some kale into the mix if you are low on cabbage.
What I want to emphasize to you here is that when you make recipes I want you to have fun with it! Recipes don’t always come out exactly right. We might be missing an ingredient or forget to add one in. And really, who cares? :) Because no matter what, know that it will still taste good because it was made with your loving energy and you can add your own creative interpretations to any recipe!

Feel Festive Mexican Quinoa Bowl
Ingredients
- 2 cups of cooked quinoa
- 1 cup of cooked black beans
- 1 cup of cooked corn kernels
- 1 jalapeno chopped
- 1 orange bell pepper chopped
- ¼ cup chopped green cabbage
- 1 avocado diced
- 1 bundle of cilantro chopped
DRESSING INGREDIENTS:
- ¼ cup lime
- ¼ cup olive oil
- 1 tsp. cumin
- ½ tsp. paprika
- 1 tsp. chili powder
Instructions
- Gather all your ingredients.
- Mix together all salad dressing ingredients in a jar and set aside.
- Place cooked quinoa, black beans and corn in a salad bowl.
- Dice bell pepper, jalapeno, and green cabbage, and add into the salad bowl.
- Dress the salad and toss it together thoroughly. Garnish with avocado and cilantro and enjoy!

Made this for dinner tonight and my husband and I enjoyed this flavorful bowl. I usually am not a huge quinoa fan, but it was really good in this recipe. I used purple cabbage instead of green cabbage and I added a red pepper along with the orange pepper. I’ll be making this again!

How do you know if fresh corn is non GMO? Your pictures show corn on the cob, but the only non GMO corn that I have ever seen is frozen. I am leery about fresh corn, even from farmers’ markets. I cannot wait to make this.
Your raw muhammara dip is one of my favorites, and a staple in my home. When I was at WF today, there were no organic red peppers, so I am going to make it with orange bell peppers. I have no doubt that it will be just as good.
