It’s such a gift to fill your plate with rich amounts of healthy fiber. And this vegan Christmas recipe offers just that! Kale and Brussels sprouts come beautifully packed with a great deal of fiber. In fact, just one serving of this salad will provide you with around 5 grams of fiber. According to the American Heart Association, we need to consume around 25 grams per day. We need all the help we can get in optimizing our digestion, especially during the holidays! Optimal digestion really is the key to improving our body’s detoxification system and avoiding inflammatory issues in the process. And Beauties, broccoli actually contains a special trio of digestive aids that help support all the steps in the body’s detoxing process. Glucoraphanin, gluconasturtiian, and glucobrassicin are three glucosinolate phytonutrients that help activate, neutralize, and eliminate unwanted contaminants in our systems! Plus, it’s easy to put together and delightfully filled with nutritious flavor. What’s more, it’s also packed with beautifying benefits. Yes please!
Eggplant comes in all shapes and sizes. So you can prepare a variety of these beauties and let your guests choose which size works best for them. They will be getting an array of beauty B-complex vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B6) and thiamin (vitamin B1), niacin (B3) with every bite!
This nightshade veggie works great with my body but it’s not for everyone. If you or one of your guests have an autoimmune condition or another condition you can substitute eggplant for acorn squash or zucchini instead. Stuffed veggies are just so delicious that it’s perfectly fine to swap out one for the other.
What’s important to remember this holiday is that we all respond to foods differently. So listen to your body and ask your guests if they have any dietary restrictions before preparing this dish for them.
