It is a new week which means it’s time for a new recipe! Today I am excited to share with you this new Cucumber Cilantro Strawberry Smoothie, guaranteed to make you shine. This is one fast and simple way to hydrate and brighten your skin, while also giving your whole body a detoxifying boost.
If you’ve been following me for a while you know how much I love smoothies. There is one in particular that is very special to me, the Glowing Green Smoothie (GGS for short!), that I have been talking about for years. Like the GGS, this Cucumber Cilantro Strawberry Smoothie is an easy way to enjoy loads of immune-boosting vitamins and beautifying minerals without much work. By blending foods before eating them, you are pre-digesting these foods so your body does not have to work to break as hard down foods. That way, you are saving your body energy during its digestion process. Okay now, let’s dive into some cucumber coolness. Believe it or not, these ordinary vegetables really are a powerhouse of nutrition. You might think that there isn’t much to the standard cucumber, but these understated veggies are ones that you definitely want to work into your diet.
This Cucumber Cilantro Strawberry Smoothie recipe is filled with some impressive beauty food. With cucumber high in all the B vitamins (except for B12), zinc, iron, folic acid, calcium, magnesium and potassium, I want to drink this smoothie all day long. It gives you amazing amounts of energy while helping to repair and smooth the collagen in your skin. With multiple B vitamins and zero saturated fats/cholesterol, cucumbers are nourishing to our hair, and again, very hydrating. Cucumbers also have a good amount of vitamin K. Our bodies need vitamin K to help support our bone, joint and brain health.
Another cool fact: the flesh of cucumbers is made up of vitamin C and phytochemicals. The phytochemicals in cucumbers cause the collagen in your outer skin layer to tighten up. Sadly these toxins can get into your body from the environment, foods you might eat like fish or meat, or even your water supply. Cucumber Cilantro Strawberry Smoothie
Ingredients
- 1 Japanese cucumber
- ¼ cup cilantro
- 1 cup of strawberries
- 1 cup of coconut milk
- 1 Tbs. coconut nectar
- 1 lime juiced
- ½ cup ice
Instructions
- Add all of your ingredients into your blender and pulse together until smooth.
- Serve in your favorite smoothie glass and enjoy!

Hi Karen! There’s no need to peel the cucumber – the skin contains lots of nutrients, which is why I like to keep it on :) Just be sure to get organic! I have not tried this recipe with almond or oat milk yet, but I am sure they would work perfectly well as a substitute for coconut milk. Happy blending! xx

Coming from a South Asian background, our grandmas always told us never to consume the stalk of cilantro. is there any truth in it?

Great smoothie – love the combination – my question is regarding the 1 cup coconut milk – that seems to be a lot of calories and fat for 1 serving – is it ok to have on a daily basis?
Hi Beauty! Thanks for checking out this recipe! I use 1 cup of organic, unsweetened coconut milk from a carton (not a can), which is much more diluted and has only about 45 calories and a few grams of fat. While I don’t like to count calories, the carton variety is a much lighter version. You can always substitute almond or another plant-based milk in this recipe if that works better for your body! xx
