Okay now, let’s dive into my favorite part about writing up these recipes for you. If you have been following me for a while, you know that I have so much fun sharing with you some of my favorite facts about the ingredients I use. With literally hundreds of wonderful items out there, it is such a joy to tell you why I use the foods I do to create these recipes for you.

Tomatoes are a summer superstar crop. If you are lucky to have a farmers market in your area, you might be able to score some right now. Buy a few organic heirloom tomatoes for yourself. After you try this salad once, I can guarantee you that you’ll be wanting to make it again next week too. And for all the right reasons!

When it comes to making a healthy and still delicious salad dressing, there are a few things to consider. For starters, if you are going to use a fatty component, it’s so important to seek out only healthy versions. For this recipe, you’ll notice that it calls for tahini, which is made up of ground up sesame seeds. Sesame seeds provide a small number of healthy fats, and protein. Plus they offer a good deal of calcium, zinc, B-vitamins and other minerals. Both tahini and sesame seeds bring a wonderful nutty taste to this salad recipe that compliments all the other ingredients so well.
Ready for an insider tip? Sesame seeds are actually a beautiful hair-strengthening food. If you have ever colored your hair or blasted it with a blow-drier, then these little seeds should become your best friend! Seeds are such amazing and fortifying food. You may notice that you can find both black sesame seeds and white ones in your local market. Black seeds are more traditionally used in Asian dishes, and you’ll commonly find that tahini uses white sesame seeds. Harvest Salad with a Tahini Citrus Vinaigrette
Ingredients
- Salad Ingredients
- 2 cups of fresh spinach
- 1 small head of red or green lead lettuce chopped
- 2 large heirloom tomatoes cut into thin wedges
- 2 radishes thinly sliced
- 1/4 bulb of fennel thinly sliced
- 1 Tbs. sesame seeds
- Dressing Ingredients
- 1 large Navel orange juiced
- 2 Tbs. tahini
- 2 Tbs. coconut oil
- 1 Tbs. apple cider vinegar
- 1 Tbs. chopped fresh mint leaves
- 2. tsp. coconut nectar
Instructions
- In a large salad bowl, toss together your spinach, lettuce, tomatoes, radishes and fennel.
- Next prepare your salad dressing in a mixing jar. Add your orange juice, tahini, coconut oil, apple cider vinegar, mint leaves and coconut nectar together. Shake until dressing is combined.
- Lightly pour dressing over your greens and then toss it together until your salad is evenly coated.
- Sprinkle on your sesame seeds.
- Place your salad onto your 2 favorite plates and enjoy!

According to recent studies, coconut oil is a big fat artery-clogging no-no, so I’m a little surprised to see it here. Otherwise, the recipe sounds delicious!
