Incorporating Beets Into Your Diet…
I love beets and their sweet, earthy flavor. AND, they are a powerhouse when it comes to beauty nutrients and health-promoting functions, such as:
Detoxification Support: The betalin pigments in beets support your body’s detoxification process and helps purify your blood, colon and liver. TIP: if you want to really help detoxify, be sure to try one of my Glow Bio Cleanses that includes some fresh beet juice!
Boost Your Stamina: Feeling like you are starting to drag partway through your workouts? Studies have shown that people who drank beet juice prior to exercise were able to exercise for up to 16% lonnger. This could be related to how nitrates turn into nitric oxide—which may enhance tolerance to high-intensity exercise. Check it out to help you get through your intense barre, spin class…or simply finishing up the yard work/shoveling!
Fights Inflammation: Beets are a unique source of the nutrient betaine, helping to protects cells, proteins, and enzymes from environmental stress. It’s also be known to help protect internal organs, improve vascular risk factors and enhance performance, due to it’s ability to help fight inflammation.
To Cook, Or Not To Cook
I like ’em both ways, and you will receive great benefits both ways. However, eating them raw will preserve the beets’ vitamin C and some other nutrients better, so in this recipe we are keeping them raw.
That being said, you are getting a lot of vitamins as well from your Glowing Green Smoothie® that you are hopefully drinking daily! :)…and cooked veggies digest well and are an important part of the Beauty Detox diet! Cooked veggies retain their minerals, fiber and other nutrients, and are important for bulking up meals in delicious and nutritious ways.
I’m for a balance. Not ALL raw (as I used to eat at one point myself!), and not primarily ALL cooked (which Ayurveda and TCM stress), but consuming both. We can have our raw veggies and cook them too.
It’s time to nourish your blood and detoxify with this yummy salad. And remember that it will keep well for a day or two in the fridge. :)
