Feel Good Pad Thai Recipe

We all remember our favorite foods that we loved eating when we were growing up. Food makes special memories! For some of us it was more comfort foods, like macaroni and cheese or pizza, and for others it was more ethnic cuisine like pad thai or enchiladas.

Whatever the dish or dishes are, our mouths still water at the thought of those flavors, but…knowing what we know now, we can also know that our stomachs would churn and we’d probably get super bloated if/when we eat some of those old staples again!

It is because our memories of these classical meals run deep, and our desires to live freely and be balanced rein, that I am ready to start doing something really special for you! Did your eyes perk up just reading that!?! I hope so!

All too often my clients tell me that they are doing so well, eating Beauty Detox Foods, but than they get this craving for their favorite dish and they fall off the wagon. And I want you all to know, this is okay!! The world is not going to end because you had a slip up. We all do it. The reality is, next time I want you to take ownership of that craving, and instead of eating that dish with its typical ingredients, switch it up and beautify it with some feel good foods! 

You are hearing me right. I’m ready to help you greet your cravings head on, and to show you ways you can make some of your classical favorite foods and still feel good about it eating them!

Enter.. my first recipe in my new series of recipes I’d like to call: Plant-Based Versions of Classical Favorites.


If you’ve read any of my books, you know how I feel about having a Glowing Green Smoothie every morning. In the summertime, it feels good following this up with a raw dish for lunch, like my Healthy Glow Kale Salad. My hopes are that you already understand why I choose to eat plant based meals every day, and why I practice proper food combining, as it works wonders on our digestion. So you can understand why I always create meals with these practices in mind.

My goal for you in this recipe post, and for many recipes moving forward, is that we take these daily practices, of properly combining plant based foods, and apply them to some of the most drooled after dishes on the market.


To kick off my Plant-Based Versions of Classical Favorites, I am excited to share with you my Feel Good Pad Thai!

If you love Asian cuisine, you’ve probably have had bite or two of pad thai. Who hasn’t!? All too often, trying to tackle this traditional dish solo can leave us feeling heavy, bloated and well let’s just say, not good.

By simply swapping out some of the traditional ingredients for Beauty Detox Foods, we can easily make a pad thai that we feel good about eating!


Delicious and beautifying, kelp noodles are rich in trace minerals, iron and vitamin K. These treasures from the sea well help your hair grow and your skin glow. They are also wonderful source of calcium! Next time your friend asks how you get calcium eating plant based, you can surprise them and let them know that 15% of your RDI comes from just ½ cup of kelp. Who would have guessed?!

Using kelp noodles in pad thai is a great substitute if you are looking to lose a little weight (not saying we count calories here, but it is a hot button for some). Containing only 6 calories per serving, you might be asking why you don’t have kelp noodles more often. So why don’t you? Kelp noodles are extremely versatile and will take on whatever flavor you dress them with.

Personally, I love to let me kelp noodles soak in a sauce for a bit to soften up and absorb good flavor. When sourcing kelp noodles, I like to seek out Sea Tangle Kelp Noodles, which you can find at your local health food store, Whole Foods or even on Amazon.


Carrots have an amazing amount of fiber, not only helping us to feel full but also helping us to naturally detoxify our systems. Imagine fiber is like the bristles of a broom, and when you ingest high amounts of fiber you are essentially taking your broom to scrub away built up debris and toxins that are lodged inside your precious digestive tract. Eat more carrots and feel good that your little broom is cleaning up on the inside while helping you glow on the outside!

Cleansing and detoxifying, carrots are rich in calcium, potassium, iron and vitamins B1, B2, C, and K. These glowing gems from the earth pack a powerful punch of health benefits!

Carrots work wonders to improve digestion and boost immunity. They are a bountiful source of biotin so your hair, skin and nails will thank you for including them in your Feel Good Pad Thai recipe.

I absolutely love growing carrots in my garden. They are so delicious even when they don’t come out perfectly straight!


Basil is by far one of my favorite herbs and I feel that it adds an incredible pop of flavor in so many different recipes. You can feel good eating basil and knowing this herb is hard at work fighting against a wide range of bacteria, yeasts, molds and viruses, as basil is highly anti-microbial. It also contains rich sources of eugenol, citronellol and linalool, essential anti-inflammatory oils that help lower inflammation.

Give your liver some extra love by including basil in your Feel Good Pad Thai, as it cleanses unwanted waste from your gut. Basil keeps the liver in top shape as it produces detoxifying enzymes, which ultimately boosts your overall immunity.

Alright! Enough said about why you should be making this Feel Good Pad Thai for dinner tomorrow night. Time to get cooking!

Feel Good Pad Thai
Prepare all ingredients.
Second, add green onions to blender.
Third, add basil to blender.
Fourth, add cilantro and mint.
Fifth, add almond butter.
Sixth, add tamari.
Seventh, add coconut nectar.
Eighth, add habanero pepper.
Ninth, add ginger.
Tenth, add olive oil.
Eleventh, add sesame oil.
Twelfth, add lime and lemon zest.
Finally, add water and blend all together.
Next, add cucumbers into a bowl.
Then, add carrots.
Place kelp noodles into the bowl.
Pour sesame oil into the bowl.
Finally, pour sauce into bowl.
Stir all together and enjoy!
Feel Good Pad Thai

Serves: 4 Servings
  • Thai Sauce
  • 6 green onions, diced
  • ½ cup basil, chopped
  • ½ cup cilantro, chopped + ½ cup for garnishing
  • 2 Tbs. mint, chopped
  • 2 Tbs. raw almond butter
  • 1 Tbs. GF tamari
  • 2 Tbs. coconut nectar
  • ½ habanero pepper, or jalapeno for less spice
  • ¼ inch ginger root, peeled and grated
  • 2 Tbs. olive oil
  • 1 tsp. sesame oil
  • 1 lime, juiced, zested
  • 1 lemon, juiced, zested
  • ¼ cup water
  • Kelp Noodles
  • 1 package Kelp Noodles, drained
  • 1 cup carrot, sliced into ribbons
  • 1 cucumber, julienned
  • ¼ cup sesame oil
  • ½ cup raw almonds, crushed (for garnish)
  • 1 lime, cut into wedges (for garnish)
  1. Add all sauce ingredients into blender and blend until smooth.
  2. Combine noodles, carrots, cucumbers, sesame oil, and red pepper to a large mixing bowl
  3. Remove kelp noodles from package and drain water.
  4. Add herbs and mix well. Set aside and make the sauce!
  5. Pour desired amount of sauce on top of kelp noodles. Sprinkle on garnish and enjoy!
