So very often I see the fantastic cauliflower placed out on a veggie platter raw and waiting to be consumed. This nutty and somewhat sweet cruciferous vegetable is actually one of my favorite veggies to enjoy cooked or roasted, as in my Roasted Cauliflower Steak with Avocado Kale Vegan Pesto recipe. I personally like cauliflower better cooked, both from a taste perspective and for our digestion. Being from the cruciferous family and all, cooking cauliflower can help reduce its gas-inducing qualities. And this goes for other vegetables like broccoli and Brussels sprouts!

Packed full of luscious and rich avocado and power-boosting kale instead, this vegan pesto recipe is like no other! It is so yummy and simple to make and it goes so well with just about everything – especially roasted cauliflower!
The raw plant fat in an avocado really brings this vegan pesto recipe to the next level! Avocados’ abundant monounsaturated fats are the ideal moisturizer for the skin and the perfect creamy addition to tasty pesto. It is nutrient-dense per calorie, making a little go a long way. Plus it’s an amazing helper to your digestion! It’s nice to know that the fats from the avocado will help our guts along. It does this by lubricating the digestive tract. This, in turn, promotes the absorption of fat-soluble vitamins in your tissues, further making your cellular membranes stronger.
Hidden Sources of Protein
Now you might be thinking, where is the protein in Roasted Cauliflower Steak with Avocado Kale Vegan Pesto? We are all so often trained with the idea that protein is necessary with every dish. And this so happens to be one of my favorite greens ever, kale. Kale is a major strengthening food for your body, making it the perfect addition to my vegan pesto recipe. Like avocado, kale also provides an amazing source of amino acids which are assimilated into the body and built into protein. I noticed a big change in my body when I started consuming kale on a regular basis, like watching muscles develop in places I had never seen before. Including kale into your life will not only boost your energy but also help you tone up.
I just love the robust flavor of my Avocado Vegan Kale Pesto recipe and I sure hope you will too! When prepping this pesto, be sure to use fresh basil leaves to really make the flavor pop. You can even add in a little nutritional yeast if you want to make it a little cheesy. This pesto stays good in the fridge for 48 hours, but you may want to double your batch if you are hoping to have extra! :) It tastes so delicious as a topping on salads. You can even add a dollop or two with your favorite stew. Yumm!

- 1 large cauliflower head
- 1 Tbs. coconut oil
- 1 large ripe avocado
- 1 lemon freshly juiced (about 4 Tbs.)
- ½ cup chopped kale
- ½ cup fresh basil, tightly packed
- ¼ teaspoon sea salt, or more to taste
- Preheat the oven to 425 degrees.
- Cut off the cauliflower stems and slice the cauliflower into ½ inch steaks.
- Lightly drizzle coconut oil the cauliflower and top with freshly ground black pepper.
- Transfer cauliflower steaks onto a nonstick pan and roast in the oven for 10 minutes on each side, until golden.
- While it is roasting, pull out a food processor and prepare your pesto.
- Add the kale, basil and lemon juice, and process until greens are broken down a bit. Add avocado and salt, and process until smooth. Taste the pesto, and adjust seasonings.
- Take the cauliflower out of your oven and transfer it to your favorite plate. Garnish with a serving of your Avocado Kale Vegan Pesto and enjoy it!
