Since I’m staying at a hotel for 8 days, one of the most important things for us is to pick out a room with a mini fridge. I actually consider it essential! While I can’t eat exactly how I do at home, it helps keep me from getting very far off track at all!! For this amount of time, if I can’t be sure that I’ll have access to getting Green smoothies and drinks, I’d rather make sure that I can. I have no qualms about checking in all my luggage and bringing a large purse with books and a separate carry on for my blender or juicer on the plane. To me, it is SO worth it, because when I am eating well I am feeling great. And I want to feel great when I’m traveling! I probably wouldn’t do this internationally, but domestically sure! Actually- maybe I would carry kitchen equipment internationally, depending on where. :)
Sure there are dinners out that we all like to have when we are away. But at least I can control breakfast and snacks/meals during the day, and not have to resort to heavy hotel breakfasts that get the day started off wrong and heavy!
Here are the essential things that I love to keep in the mini fridge (even if you don’t bring your blender) :
– A bag or box of triple washed spinach. You can literally stick it on a paper plate and slice up avocado on it, with a squeezed lemon. This is great for a healthy lunch, or a light dinner if you were out all day long and just want to chill at your hotel with a healthy meal.
– Along with that, lemons and avocados. And you can always make a variation of my taco salad recipe with avocados and other greens.
– Unsweetened almond milk, which you can pick up at good ‘ol TJ’s. Great for adding a dallop to some herbal tea to feel nice and satisfied at night.
– Baby carrot sticks to snack on.
– Celery sticks, which you can snack on to get something alkaline in your stomach first even if you know you are going out and eating a heavy dinner. Better to start a meal with that than nibble on too much table bread when you are waiting on your dinner and hungry!
– Fruit galore!! Organic plums, apples, pineapple chunks, etc.
So next time you are on the road, you might want to check with your hotel and find a room with a little, life-saving mini fridge. :) I hope you had a great Halloween and weekend. Have a great beginning of your week!

Haha, I thought I was the only person crazy enough to re-stock a hotel mini-fridge! I always used to stop at a local market after getting off the plane – I’d stuff the fridge full of berries, salads and water. I’ve totally gotten out of the habit lately though. This is a good reminder that business trips are no excuse to slack off on nourishing our bodies. Thanks Kim!

Kimberly, is there any way you could let me know a bit about Soy? A few years ago everyone was saying it was AMAZING for you, but now it seems that others are saying it’s actually TERRIBLE?! Needless to say, i’m REALLY confused!!! I used to drink organic soy milk (no added sugar or chemicals) but have since switched to almond milk b/c I heard that’s better although I’m not sure why…but what about tofu? Is that ok to eat or no? I think it may have to do w/ the processing that many commercial soy products go through…? Any tips would be GREATLY appreciated!!! THANKS SOOO MUCH!!!

Here is soy in a nutshell: Fermented soy products are okay, as trypsinogen blockers are deactivated in the fermentation process. These include: miso, natto, and tempeh. Non-fermented soy products should be avoided as they contain trypsinogen blockers (block our body’s absorption of protein, and can slow thyroid function, are highly processed and mostly genetically modified in our country, along with many other bad effects. So that means we should NOT consume tofu, soy milk, and other soy-based products except for the 3 I mentioned.

I just came across your site and I’m very happy I did, you are awesome! I can’t wait to start using your recipes. My question for you is, I have really bad under eye puffiness, I have purchased tons of products and spent tons of money on eye creams that don’t work, I recently mad a cucumber fage yogurt paste which seems to soothe and tighten but the bags don’t disappear, what do you suggest? I’m a vegetarian and have been for over twenty years but do include dairy, if I took out dairy in my diet do you think the bags would disappear? Please let me know what you think, can’t wait to hear back from you!

Hi Theresa! Undereye puffiness oftentimes indicates adrenal exhaustion. Think from the inside out, rather than just putting stuff on the surface. Are you consuming lots of caffeine, sugar, etc. (even healthy forms like Green Tea)? Also, check out my blog “Stop Slathering on the Makeup, etc…” It talks about this topic specifically!
