Easy Dairy Free Broccoli Soup

It’s the time for creamy hot soup!! I love a bow as well as the next person, but not the bloating and heaviness that come from eating the typical dairy found in these recipes.

To avoid this, we can easily swap out dairy for non-dairy alternatives. My Easy Dairy-Free Broccoli Soup Recipe will help you start implementing (if you haven’t already), healthier alternatives- while keeping all the dairy out, and the healthy foods in!

Why Dairy-Free?

Well first, let’s question if milk is really meant for baby humans, let alone adults? Or, do the mamma cows produce milk for their baby cows? The facts is, human beings are the only species that insist on consuming milk after infancy.

Unfortunately, the milk humans consume isn’t human milk, but rather- cow’s milk. And guess what? There are many reasons to avoid dairy. Here I’ll just start by highlighting 2 elements that make it very difficult for the human body to process. (If you want to hear more of my reasons, please check out more info on the blog and in my books!! I can go on and on, as I DO feel very passionately about this! 🙂  )

Here are those two elements:

First Element: High levels of casein is milk’s primary protein. Difficulty digesting protein can cause damage to the intestines and stomach, which can lead to autoimmune and malabsorption disorders and poor health.

Second Element: The second part of cow’s milk is very difficult for humans to digest is lactose—the sugar in milk—which can cause digestive disorders and upset stomach.

The dairy industry has spent a lot of money convincing you that milk is essential for good health. It starts by indoctrinating children with dairy information!

It’s important to really look at nature and how it’s created a way for mammal mothers to nurture their young. After giving birth, mothers produce milk in order to nurse their young through the first few months or years of their life.

On the other hand, human babies are intended to drink breast milk for the first few years of life, not cow’s milk. Cow’s milk is intended for baby cows.

In nature, cows stop producing milk after the calves are weaned. Dairy farmers continually breed the cattle in order to maintain ongoing lactation. This is really going against nature and what was/is intended.

The End Result

What has happened over the years, is that many people believe that dairy products (milk, sour cream, cheese), play an important role in the diet. Why? Because these dairy products contain calcium.

But the fact is, that in nature, dairy is not designed to be consumed by humans. And when you go against the laws of nature, various health issues can arise.

Human health problems associated with dairy consumption include:

  • Lactose leads to gas, bloating and discomfort—decreasing insulin sensitivity and a precursor to type 2 diabetes.
  • Since casein is the protein in dairy products, this actually promotes cancer in all stages of development.
  • Dairy is extremely acid-forming.
  • Dairy is extremely mucus-forming—slowing digestion—leading to more toxicity being compounded in the digestive tract and throughout the body.

With that being said, we should avoid dairy products at all costs. Again, this would include milk, cheese, yogurt and kefir, and opting for a more plant-based diet, that is found in all my books, starting with The Beauty Detox Solution.

Some healthy alternatives include nut milks like almond, hazelnut, and coconut milk, as well as rice and hemp milk. I personally have tried them all and recommend choosing these milks over soy milk.

You may also choose to get real domestic and try making you’re own almond milk. Just note that this version has been updated (using a thinner percentage), which is 1 cup almonds to 4 cups of filtered water.

Otherwise, you can use the original recipe if you like your milk thicker, which is 4 cups of almonds to 5-8 cups of filtered water. It depends how thick you’d like your milk, and that’s what’s great about this recipe and being able to tweak it according to your preference.

Goes to show, we really CAN make simple healthy changes in our lifestyle when transitioning from one source of food to another. Nature really has blessed us with an abundance of healthy alternatives! 

Beauty Digestion: Broccoli

We need all the help we can get in optimizing our digestion. It really is the key to improving our bodies detoxification system and avoiding inflammatory issues in the process.

Have you heard of the dynamic trio that is able to support all steps in the body’s detox process? These include: activation, neutralization, and elimination of unwanted contaminants.

This trio includes glucoraphanin, gluconasturtiian, and glucobrassicin—which are three glucosinolate phytonutrients found in a special combination in broccoli. What does that mean for us in simple terms?

Well, this dynamic trio actually supports all steps in the body’s detox process, including activation, neutralization, and elimination of unwanted contaminants. I say that alone is enough to convince me of adding this veggie into as many dishes as I can come up with.

However, in addition to the above, broccoli is rich in a phytonutrient (a flavonol) called kaempferol. Inside of our digestive tract, kaempferol has the ability to lessen the impact of allergy-related substances.

This is accomplished by it’s lowering the immune system’s production of IgE-antibodies. When the impact of allergy-related substances is lessened, the kaempferol in broccoli can help lower our risk of chronic inflammation [1].

Broccoli is know as the premiere example of a vegetable providing all three types of antioxidants (vitamins, minerals, and phytonutrients), all of which contributes to antioxidant benefits. Broccoli represents 3rd best source for vitamin C,10th best source of vitamin E, and 16th best source of vitamin A.

We really can’t go wrong in adding broccoli to our favorite greens, and when combined with coconut milk and a few other ingredients, this creamy soup will not only nourish our bodies, but will keep digestion on track! And did I mention…it’s super easy!

Prepare ingredients.

Add in the onions to nonstick pot.

Add the garlic and sauté both until softened, about 5 minutes.

Next, add the broccoli.

Add the vegetable broth.

Add the coconut milk (or almond milk), salt and pepper. Bring to a simmer and cook until the broccoli is very soft, about 10 minutes.

Working in batches, transfer soup to a blender and puree until smooth. Return puree to pan and season with salt and pepper to taste.

Serve hot, garnished with parsley.

Ingredients
  

  • 2 large broccoli crowns stems removed
  • 1 onion chopped
  • 1 garlic clove minced
  • 2 cups low-sodium vegetable broth
  • 2 cups unsweetened coconut milk or almond milk
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Parsley to garnish

Instructions
 

  • In a large pot add garlic and onions and sauté until softened, about 5 minutes. Add the broccoli, vegetable broth, coconut milk and salt, pepper. Bring to a simmer and cook until the broccoli is very soft, about 10 minutes.

    Hi Kimberly. This sounds so simple and delicious. The ingredient directions under the pictures says almond milk but under the jngredient list it says coconut milk. Does it matter? Can I use almond milk or is it better with coconut milk?

    I needed a fast and healthy dinner, and this was what I found. Its DELICIOUS! Seriously, its fabulous! All my kids looked in the pot and saw green and made a yucky face..after the first bite they turned those frowns upside down! My 8 year old son said it’s his favorite from now on! Thank you so much!
    I used organic canned coconut milk, which really added to the flavor. I also used my ninja to chop up the broccoli to small pieces and I did not stick it in the blender after cooking.
