It’s pumpkin party season Beauties! In honor of this iconic tasty squash, I’m gathering 5 of my favorite pumpkin recipes, that will be sure to tantalize your taste buds. Pumpkin on it’s lonesome, most often tastes similar to other variations of squash. Womp womp…
Yet partner pumpkin with the right ingredients and you can whip up some delicious sweet and savory dishes. And if you are really feeling this festive squash, I’m sharing a different pumpkin recipe that you can enjoy each meal of the day! I’m talking, pumpkin smoothies, pumpkin quesadillas, pumpkin soup, pumpkin curry, and even pumpkin truffles! YUMMY!
#1. Pumpkin Smoothie Bowl
To kick off this pumpkin party start your day off with my Pumpkin Smoothie Bowl. With just a few simple ingredients you can load them into your blender and make a festive treat in no time! Enjoying this pumpkin smoothie bowl is a great way to start off your morning. Just one cup provides you with 10% of your daily fiber count – keeping your fuller longer! And let’s not forget that a fiber-rich diet does seem to help us eat less, and ultimately, shed pounds [1]. What better news to hear around this time of year, than being able to lose weight while preparing for the upcoming holidays.

#2. Vegan Pumpkin Quesadillas
These flavors may not seem traditional when it comes to quesadillas… but I love them! Exciting and different! The warm savory texture of the pumpkin blends perfectly with the crunch of the peppers and onions. Topping it with the melted vegan cheese (optional) makes this Vegan Pumpkin Quesadilla recipe super memorable! Note that I do say the vegan cheese addition here is optional. The quesadilla tastes plenty creamy without it. But for those that are still transitioning away from cheese, using a vegan option in here can be a nice treat. In this recipe, I used the Daiya brand, which I think is a great transition option and can be enjoyed occasionally, albeit being processed. I still think it beats ingesting dairy by many, many miles! f you go to your local health food market, you can find an array of vegan cheeses to choose from. Don’t live close to a market? Try ordering a vegan cheese online.

#3. Pumpkin Beauty Soup

#4. Creamy Vegan Pumpkin Curry
Do you know that in Asian cultures, a kabocha squash is referred to as a pumpkin? I learned that when I was traveling through Sri Lanka. While on that trip (and pregnant with Lil’ Bub!) I had the most fabulous curry that I just had to recreate when I came home. And not that I want to get you all confused, but I’ve named this my Creamy Vegan Pumpkin Curry. Though in all actuality, I use a kabocha squash in the recipe. These beautiful squash are green in color and are a bit nuttier in taste than the regular orange pumpkin. You can use either. It’s the perfect addition for the creamy coconut sauce and decadent savory flavor in my Creamy Vegan Pumpkin Curry recipe.
And feel free to opt out of using the onion in this recipe. As I’ve mentioned before, I no longer cook with onion. If you find yourself easily stressed and irritable cut back on pungent, “rajastic” stimulating foods like onions and excessive garlic. Personally, I’ve found it can throw my energy out of place, but see for yourself, like I encourage you do with all foods. Try cutting out garlic and onions from your cooking for two weeks and see if you notice a difference- like feeling calmer :). Luckily there are so many other powerful seasonings in this recipe that you are sure not to miss it!
