Chili Lime Arugula Salad
Ingredients
SALAD INGREDIENTS:
- 3 cups of arugula
- 1 cup fresh mango chunks
- 1 medium red bell pepper seeded and thinly sliced
- ½ cup freshly diced cucumber
- ½ ripe avocado pitted and diced
DRESSING INGREDIENTS:
- 2 Tbs. olive oil
- ¼ cup lime juice
- ¼ Tbs. coconut nectar
- ⅛ tsp. ground cayenne pepper
- ⅛ tsp. ground cumin
- Sea salt to taste
Instructions
- In a large salad bowl, combine arugula, mango, red bell pepper, cucumber, and avocado.
- Whisk together salad ingredients and drizzle over salad.
- Toss salad together well and enjoy!
