This incredibly vitality and youthful energy-promoting pie is also delicious! The other day, I gave my husband a slice of my new Fountain of Youth pie, and he couldn’t believe how yummy it was! Isn’t it so wonderful when such powerfully healthy foods also taste so good? The secret is in how we combine them.
You don’t have to bake it; rather, you can freeze it. In fact, it’s a great thing to keep in your freezer, so you can have a little slice when you want something as a “treat.” At the same time, it will be deeply nourishing for your skin, energy, and overall vitality!
Here are some of the key ingredients we call this “fountain of youth” pie:
Amalaki
In Ayurveda, this herb is called the “fountain of youth” and is considered the best among rejuvenating herbs. It is one of the key ingredients in our brand-new Glowing Greens Powder, our daily vitality booster. You can mix it in water to make your Glowing Green Smoothie or recipes like this one!
One of the most important ancient texts of Ayurveda, and one I studied extensively in my Ayurvedic practitioner program, is the Charaka Samhita. It says, “Of all the rasayanas, Amalaki is revered as one of the most potent and nourishing. Amalaki is the best among rejuvenating herbs.”1
One of the most remarkable aspects of Amalaki is its ability to balance all three doshas – Vata, Pitta, and Kapha – which are believed to govern various physiological functions in the body. This tridoshic nature makes Amalaki suitable for all body types, seasons, and weather conditions, a rare and valuable characteristic among fruits. Very few fruits have this quality!
It’s also super high in vitamin C, helps to support digestion and nutrient absorption, and supports healthy skin and hair. It also supports the liver, brain, heart, blood and circulation. Fountain of Youth Pie Recipe
Fountain of Youth Pie
Ingredients
- 2 cups Almonds
- 1/2 cup Dates
- 3/4 cup Water
- 1 tbsp Glowing Green Powder
- 1/4 cup Brazil nuts
- 1/2 cup Maple syrup
- 1 tbsp Cacao powder
- 2 packets Unsweetened acai (such as the Sambazon brand)
- 1/4 cups Coconut oil
- fresh Mint leaves for garnishing
Instructions
- Process the almonds and dates in a food processor (or a blender). Press firmly into the bottom of a 9’ pie dish, creating a raw crust.
- Blend the water, Glowing Green Powder, Brazil nuts, maple syrup, cacao powder, acai, and coconut oil until smooth. Pour over the crust and smooth into an even layer with a spatula or a knife.
- Place on an even surface in the freezer, and freeze for 4-6 hours, until solid or overnight.
- Take it out of the freezer right before serving (it can thaw for a few minutes if it's hard to cut). Carefully lift under the crust to keep it intact—it's raw and made of pressed nuts and dates! Garnish with mint, and enjoy!
