Hi Love! Do you love cookies like me? I love them so much! I don’t eat them every day, but when I do, I sure do love them. In fact, I love them more than ice cream or any kind of cake or candy. I love cookie texture and how you can break them apart into pieces. And of all the cookies I love most in the world, chocolate chip ones are my fav!
Cookie-making has become a real fav with my kids as well. The little one mixes, the bigger one measures and pours. All of this is all great…so long as it’s easy! For me, cookie recipes (and all others, really!) have to be simple, not take too much time, and be as healthy and whole-food based as possible. I’ve seen cookie recipes where you freeze the dough for a few hours. I’m sure that makes a more perfect texture, but I’m not trying to be a pro baker! (though I’ve seen that British Baking Show a few times- and wow, respect for those bakers). I want easy and yummy.

As simple as I could make- and there’s no hard to find egg replacers or mixing too many ingredients. And you can dress it up with green and red vegan sprinkles for the holidays, if you would like to.

Super Easy, Delish GF, Vegan Chocolate Chip Cookies
You have to try my Super Easy, Delish GF, Vegan Chocolate Chip Cookies! This recipe is simple and does not take too much time, and is as healthy and whole-food based as possible. If these things are important to you too, you are in for a great recipe! There’s no hard to find egg replacers, freezing dough or mixing too many ingredients. And you can dress them up with green and red vegan sprinkles for the holidays, if you would like to!
Ingredients
- 1 cup oat or almond flour
- ½ tsp baking soda
- ¼ tsp sea salt
- ¼ cup maple syrup
- 2 tbsp coconut oil melted
- ¼ tsp vanilla extract
- 1/3 cup vegan dark chocolate chips
- green and red vegan sprinkles optional for Holiday
Instructions
- Preheat the over to 350 degrees.
- Mix the oat or almond flour, baking soda, and sea salt together in a large bowl.
- In a separate bowl, whisk together the wet ingredients of maple syrup, coconut oil, and vanilla extract.
- Fold the wet ingredients into the middle of the dry ingredients and whisk until well mixed (the dough will be pretty thick!).
- Mix in the chocolate chips.
- Grease a baking sheet with coconut oil, or line it with parchment paper.
- Drop 1/12 of the cooking dough onto the sheet, spacing evenly into rows.
- Pour desired amount of sprinkles on to cookies.
- Bake for 10 minutes, then bring out to cool, moving on to cooling racks, for at least 10 minutes before eating.
