It’s that time of year, when you especially want some ice cream! I have one for you today that I am thrilled to share!! You’ll be feeling so much lighter and fuller with my Creamy Pineapple Ice Cream Recipe.
And we don’t want to succumb to the sugar cones stacked high with gob-fulls of colorful dripping ice cream and gooey bits of caramel and chocolate, BUT we do want an amazing replacement.
We will be avoiding all that dairy and processed sugar that only causes bloating, acne and digestive issues. Instead, opting for beauty foods that will pack your gut with nutrition and make the digestive process a breeze! And it’s delish, which is obviously key (and the point!) when it comes to ice cream.
Beauty Food: Pineapple
I think pineapples are one of the best fruits ever! A delicious tropical fruit that also has amazing beauty and health benefits—including improving digestion, helping shed weight, improve the immune system and increase circulation (to name just a few).
Pineapple also hydrates and is packed with bromelain—a special compound that helps to promote optimal digestion—which is key for truly supporting you in expressing your natural beauty[1]!

Pineapple’s bromelain enzyme also helps in improving circulation and reducing mucus (key components to ongoing cleansing and detoxification), keeping your skin soft and healthy.

Bananas also contain vitamins A, B, E, K and C as well as 6 mcg of folic acid, which is essential for red blood cell formation. Coconut Water
In addition, you will fuel your body with energy and hydration found in the coconut water. Some key nutrients found in coconut are potassium, magnesium and calcium.
The potassium is an electrolyte that helps to facilitate cellular cleansing and is about twice as concentrated in coconut water, as in a banana (but in no way am I diminishes the power of banana!).
Because it is so full of electrolytes—like potassium—it helps to regulate the fluid levels inside cells and balance the high amount of puffiness that may come from too much sodium intake.

Creamy Pineapple Ice Cream Recipe
Ingredients
- 2 cups frozen chopped pineapple
- 2 frozen ripe bananas
- ½ cup of coconut water
- 1 date
Instructions
- In a high-speed blender combine all the Ingredients.
- Using a tamper put the blender on the highest speed setting. Mash the mixture until fully mixed and forms into "nice cream".
- Scoop up and enjoy with your favorite toppings.
- Enjoy!

Looks delicious! One question though, what coconut water do you recommend? I am not in a place where fresh coconuts are readily available so need to depend on packaged. I know that there are better brands – just not sure what they are! Thank you!
