Fortunately, science doesn’t support the notion that all grains are bad; at best, the research shows that we simply need to be selective about our grain consumption—and that good grains can be part of a healthy, balanced diet for most people.

Gary Jansen is the director of Image Books and a senior editor at Penguin Random House where he has edited and published books by New York Times bestselling authors.
