Spring is in the air, Beauties! I don’t know about you, but spring reminds me of flower blossoms, spring cleaning, and delightful recipes! Traditionally we talk about spring as the perfect time to clean your home. Similarly, it is a perfect time to do some internal cleansing, too! For that reason, one of my favorite things to do in spring is to enjoy this Spring Green Minestrone Soup recipe. Loaded with antioxidants, protein, magnesium and calcium, this soup is one that will help you get your body into some deep spring body cleaning! 

It doesn’t matter if it is spring, summer, winter or fall – I just love soup all year round. It is a perfect nutrient-packed food that is easier for the body to digest. But I don’t recommend having just any old soup. Soups with loads of sodium and dairy are definitely a no-no. When you are looking for a great soup to make, seek out recipes that call for a variety of fresh, seasonal produce and light broths. This way you are set to get a wide variety of nutrients in every bite. Soups, like my Spring Green Minestrone Soup recipe, are an energy-packed, easily digestible option!

Spring Into Clean Energy

Beauties, the time of year has come that I urge you to wake up. Spring is upon us all.  All of nature is supporting you in cleansing right now. Literally. We see the newness in the budding flowers and perky new leaves out in nature, or in the local parks if you’re a city person! Ayurveda teaches us this is the season to cleanse.  And it all lines up so intuitively with the natural urges you might have been feeling the past few weeks to bust out, clean out and be your best!

Cleaning out the house is not just for your body, but it is also for your mind. The more internal blockages we have, the less we feel our absolute best. Plus, when our bodies are cleansed, our minds become more clear. This further allows us to strengthen our focus and work towards achieving our larger goals! So whatever your list of things ti achieve, now is the time to transform and get yourself there.

Gather In Your Green Veggies

One of the best ways to do some internal cleansing is by rotating in a variety of healthy green vegetables to your diet. As in my Spring Green Minestrone Soup recipe, green veggies like broccoli, asparagus, peas, and spinach are perfect for providing us with all the antioxidants, minerals, fiber and protein that we need. Do you know that an incredible 95% of our body’s activities involve minerals? It’s true! This is why I’ve incorporated a variety of greens that are loaded with nutrients into this recipe. Now let me give you a little more detail about why these greens are so amazing!

Greens #1: Broccoli

One of the star ingredients in my Spring Green Minestrone Soup recipe is broccoli. Now this veggie really deserves more attention than people give it. Do you know broccoli happens to contain all three types of antioxidants? It’s loaded with vitamins, minerals and phytonutrients. All the things that we can use a little extra of these days! Antioxidants work powerfully together to help fight free radicals throughout the body. They ward off cell damage and boost our immune systems

Think of it like this. If broccoli entered into a nutrition contest, it would come home with numerous awards! Coming in third place for your best source of vitamin C and 10th place for your best source of vitamin E. It might even show up for 16th place as your best source of vitamin A. Cha-ching! Broccoli is and always will be a winning vegetable in my eyes. 

Greens #2: Asparagus 

Second up in my Spring Green Minestrone Soup recipe is asparagus. Now Beauties, not only is asparagus a springtime seasonal veggie, but it is also a wonderful plant-based food source of amino acids, fiber and vitamins.

Amino acids are the building blocks we need to make proteins in our bodies. Your body uses amino acids from plants to make a complete protein. And lucky for you, there are nine essential amino acids that are abundant in plant foods like asparagus. These nine essential amino acids are phenylalanine, valine, lysine, leucine, isoleucine, tryptophan, threonine, histidine, and methionine. And research indicates that eating a variety of plant foods over the course of a day can provide you with all the essential amino acids we need. 

Besides adding amino acids into our diets, asparagus is a beautiful source of fiber. Fiber, as we all know, is the key to our cleansing journey. And that same thing goes with vitamins! This unique, earthy veggie is a great source of vitamin A and vitamin K.

Greens #3: Peas 

Next up on my list of spring green veggies are peas. As I mentioned above, many of us have been conditioned to think that protein is associated with animal foods. But whole plant foods like peas are great sources too! One cup of peas provides you with 8 grams of protein. Remember, on average women only need 46 grams a day.

Besides protein, peas provide us with a crucial mineral so many of us are lacking, which is magnesium. Do you know that magnesium actually opens up 300 different detoxification pathways in the body? It is a key mineral for keeping our bowels regular, and therefore crucial to maintain ongoing cleansing.

Another important way to achieve that deep, ongoing cleansing is with my New Feel Good Detoxy 2.0. As you eat more greens in your diet, you also shift your body into a greater alkaline state. Plus when you are in an alkaline state, your body is able to keep calcium and other minerals intact in the body. The best sources of calcium are dark leafy greens, like spinach! So give yourself an extra serving of calcium with a second helping of my Spring Green Minestrone Soup. Your body will thank you for it!!

Spring Green Minestrone Soup Recipe

Spring Green Minestrone Soup

  • 2 Tbs. coconut oil oil
  • ½ fennel bulb, thinly sliced
  • 2 leeks, thinly sliced
  • 2 sage leaves, finely chopped
  • ¼ tsp. cayenne pepper
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 8 cups of vegetable broth
  • 1 cup of broccoli, finely chopped
  • 1 cup of cannellini beans
  • ½ cup of fresh English peas, removed from their pod (or if hard to source, frozen is okay)
  • ½ cup of sugar snap peas
  • 1 bunch of asparagus, chopped
  • 2 cups of fresh spinach
  • ½ lemon, juiced
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Nutritional yeast, to taste
  1. Heat 2 tablespoons of coconut oil on medium in a large soup pot. Add in fennel, leeks, sage leaves and spices and cook for about 5 minutes.
  2. Add in vegetable broth, broccoli, asparagus, beans, and peas. Bring soup to a simmer and partially cover. Cook for about 10 minutes.
  3. Stir in spinach and lemon juice and let simmer for 3 more minutes.
  4. Serve in your favorite soup bowls.
  5. Add sea salt, freshly ground black pepper, and nutritional yeast to taste.
