Thanksgiving is right around the corner Beauties. And to help you with all of your meal planning this holiday, I’ve pulled together delicious “Plant-Based Thanksgiving Recipes” to share with your family and friends.
This season is one of my favorite times to enjoy the company of others! It’s truly a heartfelt time of year when we can all gather and share our gratitude with one another.
So try not to get caught up in the hustle and bustle this Thanksgiving. Instead, take a deep breath before you start to cook your plant-based Thanksgiving recipes. Soak in all the different colors of each vegetable you prepare. Smell all of the aromas from each dish. And really just be in the beauty of the present moment. Happy cooking!
Rosemary Mashed Vegan Sweet Potatoes
Now many of us crave some creamy mashed potatoes on Thanksgiving. Have you ever thought of twisting your classic recipe just a little bit? Next up in our plant-based Thanksgiving recipes is my digestion enhancing Persimmon Greek Salad. This salad is not only packed with the amazing goodness of persimmons but also has an Italian twist. Each colorful ingredient, radicchio leaves, kale, red onions, Kalamata olives, and persimmons are loaded with nutrients! Not familiar with persimmons? They are hearty little fruits that are great for digestion, containing almost 20% of the daily requirement of fiber in a single serving!
Spiced Butternut Squash
Here’s a delicious dish loaded with warming spices and a bit of sweetness from the coconut nectar. My Spiced Butternut Squash is so simple to prepare that you will want to make it for more than just Thanksgiving. All you need to do is season your chopped up butternut squash and roast it for 20-30 minutes and voila! Your fiber packed, skin-brightening and beautifying recipe will smell divine and do wonders on your digestive system! Did I mention it will taste delicious too? You bet it will!
Green Bean & Quinoa Casserole
If you are looking for an easy (emphasis on easy!) plant-based Thanksgiving recipe this is it! My Green Bean and Quinoa Casserole brings all the comforts of a yummy casserole without the burden of time to prepare it. It’s packed with energy enhancing nutrients like minerals, protein, fiber and it helps stabilize your blood sugar. So feel good this Thanksgiving and load up with this energy-boosting recipe.
Raw Zucchini Lasagna
My Raw Zucchini Lasagna is going to change the way you view lasagna forever. Instead of your typical layers of white-flour based pasta noodles, dairy, and meat, I’ve created a recipe that will leave you feeling beautiful from the inside out. This Vegan and Gluten-Free Mac and Cheese brings up nostalgic feelings for a lot of us. I personally love the velvety rich texture of eating this dish, which is super satisfying. In this recipe, the cheesy richness is derived from a blend of butternut squash and coconut milk. Since its properly food combined it won’t leave you with digestive strain. Like this recipe? Pumpkin Pie Parfait
What’s Thanksgiving without a little pumpkin pie, right Beauties? To shake things up a little bit, treat your guests to my favorite Pumpkin Pie Parfait. This fiber-filling and fabulously-tasting puree is layered with gluten-free granola and coconut whipped cream. (For the whipped topping I use So Delicious Dairy Free Coco Whip). YUMMMM!!!
Gingerbread Banana Nicecream
If you’re like me and crave ice cream all times of the year than it’s time to jump on the nicecream train. My Gingerbread Banana Nicecream will actually make you feel good after you eat it, instead of feeling bloated with digestive issues and acne. This is because nicecream avoids dairy and processed sugar that’s found in typical ice creams. Ugh, no thank you. When you’re craving something cool, creamy, and on the sweeter side, opt for ingredients that are bursting with nature’s nutrients, fighting antioxidants, and natural sugar flavorings!
Vegan Creamsicle Coconut Cookies
And last but not least for my plant-based Thanksgiving recipes are my oh so delicious Vegan Creamsicle Coconut Cookies. Sometimes it’s nice to have a few treats available for dessert and these are sure to delight your taste buds! They are gluten-free and are naturally sweetened from dates and maple syrup. Top that off with some crunch from coconut flakes, heartiness from oats and aromatic orange zest and you’ve got a simply awesome treat.

And relax into the experience, however it looks or shows up for you. We all have perfectly imperfect families, situations…and food! Use this opportunity to tell someone how much they mean to you.
