Plant-Based Thanksgiving Meal

It’s that time of year again, Beauties! Time to gather around the table with friends and family, and celebrate all that you’re grateful for. And to assist with your holiday meal prep, I’ve pulled together a healthy menu for your Plant-Based Thanksgiving Meal to enjoy with your loved ones.

What better way to share health and happiness with the ones you love, than to nourish your bodies and souls while reflecting on what you’re thankful for?! This season is a beautiful time to gather and share our gratitude with one another.

So try not to stress over the holiday hustle and bustle this year. Instead, take a moment to center yourself before you start to cook your plant-based Thanksgiving meal. Soak in the beauty of the present moment and the joy of good company. Happy cooking, Beauties!

Feel Pleased Pomegranate Kale Salad

Kick off your Thanksgiving meal with little something for your digestion that also wakes up your tastebuds! My Feel Pleased Pomegranate Kale Salad won’t weigh you down, but it will fill your mouth with flavor and wonderfully crunchy texture. Plus it’s packed with tons of fiber and nutrients to promote feeling good in your body, mind and spirit. It makes a perfect first course for your holiday meal!

Feel Comfort Coconut Squash Curry Stew

The next dish for my Thanksgiving meal roundup is this hearty and comforting Coconut Squash Curry Stew. Full of warming fall flavors, this delicious recipe contains grounding spices like ginger, turmeric and curry powder. As you eat this, you’re sure to feel like you are getting a nice warm hug, while you enjoy the moment of a healthy meal surrounded by loved ones.

Crispy Rosemary Turnip Fries

Here’s an indulgent-tasting recipe that is also guilt-free! My Crispy Rosemary Turnip Fries come with all the flavor and crunch of real fries, without the deep frying. Turnips aid with digestion, boost immunity, and help reduce inflammation, so they’re the perfect veggie to munch on for your holiday meal. I have a feeling this recipe is going to be a huge hit at your Thanksgiving table, for both kids and adults alike 😉

Lentil Stuffed Squash with Mushroom Gravy

This Lentil Stuffed Squash with Mushroom Gravy recipe is a must-have for your Thanksgiving menu! Packed with the rich dietary fiber from the lentils and loads of nutrients from the veggies and herbs—your belly will be so happy that you won’t even miss the meat! Vegan and Gluten-Free Mac and Cheese

As you gather around your plant-based Thanksgiving table, this Vegan and Gluten-Free Mac and Cheese might bring up feelings of nostalgia. I love the velvety rich texture of eating this dish, which is super satisfying. In this recipe, the cheesy richness is derived from a blend of butternut squash and coconut milk. Since it’s properly food combined it won’t leave you with digestive strain like the “real stuff.” Maybe this year you won’t even need to unbutton your pants after you’re done eating!

Feel Detoxed Roasted Brussels Sprouts with Spicy & Creamy Tahini

This Brussels sprout recipe makes the perfect green accompaniment to some of the more rich dishes on your Thanksgiving dinner menu. Not to worry – my Feel Detoxed Roasted Brussels Sprouts are still hearty and satisfying! This recipe combines the power of earthy Brussels sprouts with the creamy delight of a spicy tahini dressing. With stabilizing and detoxing properties, this dish will leave you feeling like you’re glowing from the inside out.

Gingerbread Pumpkin Cookies

I hope you leave a little room for dessert, Beauty! These Ginger Pumpkin Cookies bring some warm, autumn delight to the Thanksgiving table. Plus they’re perfectly bite-sized, so you won’t overdo it on the sweets! Luckily, the cookies are made with simple vegan ingredients and natural sweeteners, so if you reach for two…or three… (who’s counting?!) you’ll still feel good inside and out!

Feel Joyful Cacao Fudge

And last, but certainly not least: this Feel Joyful Cacao Fudge recipe rounds out my plant-based Thanksgiving menu. These are a truly special treat sure to delight your taste buds! What better way to end a beautiful meal than with mood-enhancing cacao, brain-boosting walnuts and sweet coconut nectar? Plus, these little pieces of fudge are so easy to wrap up and send home with your guests, so you’ll keep spreading joy after Thanksgiving is over.

    Incredible, incredible, incredible menu! This was my first plant-based Thanksgiving and it was such a blast to make and eat. I felt a sense of empowerment, which I did not expect; and the food lasted four days. While I bought ingredients for everything save the fudge and squash, I only managed to make four of the remaining six dishes which was more than enough. Thank you, Kimberly.
