Hi Kimberly! I sent in the question about families making the shift to be more plant based. Thank you SO much for your advice and ideas! Since this podcast I have been trying fun recipes she is interested in and having my daughter help out with preparing meals and its been a huge hit!
She use to say she would NEVER eat a salad but now she has a few she loves and can make all by herself with all her favorite veggies. Since relaxing a little and getting her involved in finding recipes built around the veggies & foods she already likes she has expanded her list of favorite veggies. She used to only eat carrots but over the last month she has started eating red peppers, spaghetti squash, mushrooms, romaine lettuce, butter lettuce, and even spinach! She now eats avocados, cucumbers, tomatoes, and so many other things she wouldn’t even allow on her plate a month ago. She loves lots of the recipes from your site, especially the brown rice wraps which she eats for lunch often and makes her own version of your guacamole pizza on them. She also has a great healthy smoothie she likes to make for a snack. I was so surprised at how quickly just changing my approach helped her be more open to trying plant-based meals. Thanks again!
